some dinners i've made recently!

i'm trying to get better at cooking so enjoy my cooking (and eating!) log

monday, may 5 - broccoli cream pasta

yeah yeah yeah i know i haven't cooked in like a week. that's kind of a lie as i did make some fried rice sometime last week but honestly all i've been eating is quesadillas with guacamole. i thought i should probably have a meal with the things that were withering away in my fridge. i also desperately needed to get out of the quesadilla slump as this happens every year when i get depressed and stressed during exam season, so maybe making a meal will help me get out of it. it kind of worked as the food was pretty good (idk what i did but the cream sauce tasted COMPLETELY different than usual) but i did in fact make myself a quesadilla for lunch the next day.

friday, april 25 - tomato and garlic pasta

boy oh boy could i not be bothered today. that in combination with the fact that i needed to use up some tomato passata and cream meant that i just made a fuck ton of tomato pasta. the pasta was a little overcooked but that was my fault because i got caught up in conversation with a friend. i'm going to be so honest, it was exactly what i needed. some kind of boring but comforting food was super nice and since i made so much it lasted me the full weekend!

wednesday, april 23 - peanut noodles

ok i'm trying something new. i feel like i've heard people talk about peanut noodles a lot (i am a true victim of my tiktok fyp) so i thought i'd give it a go . . . without most of the necessary ingredients. but i digress! i'm not gonna lie, the sauce did NOT taste good when i first made it, but after i added it to the warm noodles and let it settle it actually tasted pretty good! it's definetely gonna be a new fav, mostly because i like it but also because i now have an entire jar of peanut butter that needs to be gone in a few weeks lol

monday, april 21 - fried rice

bit of a basic dinner i know, but i was making it for a family dinner so it had to be easy to make in a relatively large quantity. honestly i'm loving dinners i make with these ingredients, so much so that i'm becoming known for eating either fried rice or noodles with basically the same ingredients (minus the egg). also i love broccoli so i tend to use that as my go to veg but BY GOD is it annoying to store when you only have half a mini fridge.
